Sustainability Matters Again

Sustainability took a backseat during the height of the pandemic. According to HT’s 2020 Customer Engagement Technology Survey, few were focused on recycling and environmental sustainability in 2020, but operators cannot and should not forget the importance of the environment to their guests and to the overall future of the hospitality industry.   Other restaurants are touting their Earth-friendly commitments. KFC has gone all in on sustainable packaging.  Taco Bell is partnering with TerraCycle to tackle recycle its sauce packets. In April, Chipotle announced a 51% waste diversion rate through recycling, composting, and waste-to-energy programs

In other news, Just Salad, has completed a capital raise, with participation by the circular economy-focused investment firm Closed Loop Partners, as well as returning investor Panda Restaurant Group, the parent company of Panda Express.

Just Salad will use the capital to expand its geographic footprint and implement new environmental sustainability and technology initiatives. Currently the brand has 47 locations in New York, New Jersey, Illinois, Pennsylvania, North Carolina, Florida, and Dubai, and plans to double its footprint over the next two years.

Just Salad is the first restaurant investment for Closed Loop Partners, a New York-based investment firm. Their investments align capitalism with positive social and environmental impact, driving toward zero-waste “closed loop” systems that benefit people, the planet and business.
