Nashville-based Hattie B's Hot Chicken has signed on with CM Systems LLC’s food safety solution.The growing fried chicken eatery will use the ComplianceMate checklist and temperature monitoring system for all six of its stores.
Hattie B's serves Nashville-style hot fried chicken, accompanied by handmade Southern sides and served with local brews. The family-owned business founded and operated by father-and-son team Nick Bishop, Sr. and Nick Bishop, Jr., focuses on creating a distinctive dining experience. While most hot chicken hotspots emphasize the "hot," Hattie B's executive chef John Lasater developed a more rounded flavor profile without losing any kick, with spice ranging from mild to "Shut the Cluck Up!!!" He then added freshly made Southern-style sides, served in a casual dining environment with a range of local beers on tap.
Hattie B's fresh take on hot chicken has fueled rapid growth that shows no signs of cooling down. The young chain has six locations one in Birmingham, Ala.; four in Tennessee: one in Atlanta.
"As we grow, I want a good quality assurance and food safety program in place to cover all our bases," said Lasater. "We want to protect our brand and food." To help strengthen and enforce brand standards and food safety practices as they open new locations, Hattie B's has chosen CM Systems' ComplianceMate checklist and temperature monitoring system for all its stores.
The ComplianceMate system includes wireless sensors to continuously monitor and record temperatures inside any cold holding units. Additionally, using the ComplianceMate app, users can also complete operating checklists for literally any HACCP or brand-specific benchmarks.
The checklist system can grow with them while making it easy for staff at each location to stay on top of food safety and quality. "ComplianceMate makes it possible to see everything in real-time, so you can see if someone doesn't complete a certain checklist," said Lasater.
